The battling 1-0 win - earned by Ebere Eze - saw Arsenal go four points clear at the top of the Premier League table.
While it's still early in the campaign, Parlour says the way the defence is performing - and how the team is managing to win difficult games - is encouraging in terms of the title race.
He told Tribalfootball.com: "Yeah, it's all about winning football matches. I always go back to the Invincible season. And I say, you know, we drew 12 times, but probably six of those 12 games, that we drew, we should have lost. But we didn't.
"We somehow got a result and we somehow grinded out a 2-2 draw, 1-1 draw or something like that. And it's all about the defence, which at the moment are really in top form. They really are."
Parlour continued: "They're clean sheets. Arsenal were built like that back in the day with George Graham, Tony Adams, Martin Keown, Steve Bould, Lee Dixon, Nigel Winterburn, David Seaman. It was a real good solid base we always had. And it looks like they've got a similar sort of base now, which is great because if you don't concede too many goals, you've always got a chance to win a football match especially with the players they've got going forward.
"So, I'm really pleased for Gabriel and William Saliba. We know they're top, top centre-halves anyway. One of the best in the world, probably, in terms of partnerships. But (Riccardo) Califori's come in at left-back. He's done really well. (Jurrien) Timber has been absolutely brilliant. I think he's been one of the best players this season. He's really got a good understanding with (Bukayo) Saka on the right-hand side. He gets forward as well, as much as he defends, and he's been excellent.
"(David) Raya has been fantastic as well in goal. They've just got to keep it going. Hopefully they can stay all fit. Even Ben White coming in, (Myles) Lewis-Skelly, they've got so many options.
"(Cristhian) Mosquera coming in, you know, they've got loads and loads of options at centre-half. It's a very healthy squad at the moment and they've just got to keep doing what they're doing."
