The Sun says the Potters watched Dembele in Saturday's Old Firm draw — as Celtic get braced for bids.
Brighton are expected to table a £20 million offer this week after Chris Hughton made the Hoops ace his No 1 target.
But Stoke boss Mark Hughes sent head scout Lee Maybury to run the rule over Dembele against Rangers.
The Potters gaffer is desperate for a striker and has been linked with Liverpool duo Daniel Sturridge and Danny Ings.
