Wolves boss McCarthy has targeted a move for the former QPR and Watford man this summer as he bids to beef up his defence at Molineux.
Shittu, 28, will be allowed to leave the Reebok Stadium after just one season under Gary Megson, in which he made nine Premier League starts and 12 appearances in total.
The 16-cap Nigeria international had joined the Trotters in August after two consistent seasons at Vicarage Road.
