Jeremain Lens had sent PSV into the break level as he fired a 36th-minute equaliser after Siem De Jong opened the scoring seven minutes earlier.
The score remained locked until Danny Hoesen broke through 18 minutes from the end and Fischer sealed Ajax's win - their fourth on the spin - in the shadows of full-time.
